Our Biltong eating Griquas lost one of their best coach last year in Dawie Theron who has been appointed SA U20 coach. Dawie has been magical with the Biltong Eaters and not good news for non Saffers. Everyone will see a huge differense when the U20 WC tournament kick off this year.

Look like Knuckles will be the favourate to take over the Biltong Eaters reigns

Former Aus coach for Griquas?

Kimberley - Former Australia and Queensland Reds rugby coach John Connolly is one of the favourites to replace Dawie Theron as head coach of Griquas for the Currie Cup series.

Sport24 has received reliable information that Connolly, who coached the Aussies in 2006 and 2007, is a strong candidate to succeed Theron.

The Griqualand West Rugby Union (GWRU) executive head, Arni van Rooyen, didn't want to confirm whether Connolly had applied for the position of head coach.

"Naturally, the names of none of the candidates can be made public."

"But I can say that some of the applicants have coached at Super and national level," Van Rooyen told Sport24 on Tuesday.

Connolly became involved with the Reds' senior team for the first time in 1989.

While he was coach, the Queensland team won the then Super 6 series in 1992, and tasted glory in the Super 10 in 1994 and 1995.

With the start of the Super 12 series in 1996, he remained with the Reds, and in 1998 and 1999 was named Super 12 coach of the year.

From 1999 to 2000, Connolly was with French club side Stade Francais, after which he also coached in Wales (Swansea) and in England (Bath).

He was appointed Aussie coach in 2006.

His contract expired in 2007 after the Wallabies lost against England in the quarter-final of the World Cup tournament.

Meanwhile the Griquas' assistant coach in the Currie Cup series, Abré Minnie, has been appointed chief coach for the team for the Vodacom Cup series.

His appointment comes in the middle of GWRU trying to find a substitute for Theron.

He has been appointed chief coach of the South African U-20 team.

The GWRU initially wanted to appoint the new coach in time to be involved with the Vodacom Cup series from the start, but this was not feasible.

"Griquas has received a large number of applications for the position of head coach," the union said on Tuesday in a statement.

"The process of finalising a shortlist has begun, and a date for the interviews will be announced after the shortlist has been finalised."

"Abré Minnie will be the acting head coach for the Vodacom Cup series."

With the possibility of the appointment of a new head coach becoming a lengthy process, it is not surprising that Minnie has been appointed the Vodacom Cup coach.

With him at the helm, the team can now focus on the Vodacom Cup series.

How do you rate the quality of South African meat in Australia? Im in Sydney and my fav Saffa butcher is Springbok Delights though Stanley Street Butcher in St Ives isn't too bad either.

On Mowbray Rd opposite the school? Mate he is a great butcher, bloody good meat. Used to get all our meat from them when we lived there, was on my way to and from work. Dunno about the SA meat, it was all aussie stuff when I used to buy there (2005 and before). Still the same bloke running it - big blond guy who looks like he could play in the springbok front row?

Springbok Delights is my local too, and still the same owner who looks a tiny bit like the merc in lethal weapon 2 last night.

Always buying cider there for my wife, and used to get their biltong but recently bought a dehydrater off ebay so now make my own - 4 hours to marinate and 12 to dry, is awesome. Have found roo works really well, my chilli skippy is superb with beer..

At Griquas his main job will be to bring young players through. If he is good in developing players he should be fine. Most players at Griquas is coming from U21 CC level , getting use to CC rugby level and on their way to the bigger S15 franchises. There is just enough money to keep a few big name players but they often selling the Bjorn Bassons to the Brutes to get some money back on their budget.

If he is good with the fatties , he should be fine.

@ Blou: I'll take Kimberley anyday ifo the Valies, its still part of the Cape Colony!

- 1 Tablespoon crushed chilli (pre crushed "fresh" jar from coles)
- some "Biltong Salt" we got from a saffa shop ages ago

Think we had some on the Meat thread? If not I'll dig them up again.

Dont think you'll get SA meat in Aus, thsi mad cow sickness and shite its probably difficult to get our meat in Aus. We do get a lot of NZ and Aus meat this side but not close to SA meat in quality. Think it all about the amount of thunder and lighting we have up on the veld. Hail is natures way to tenderise our life stock.

BILTONG (You use the silver & top side of the beef for biltong cuts.)

PLAIN BOERE BILTONG

Salt, pepper & coriander Mix:
2 kg coarse salt
250 ml Coriander - NB, seed, not leaf
250 ml Roasted (in a pan a bit) coriander
125 ml fine pepper

That is your basic biltong mix.

Wilds Biltong
Add 50/50 Vinegar & Worcester sauce to let the meat lose its wild taste

Nico VleisKombuis Beef Biltong Spice
10kg coarse salt
700g fine black pepper
200g brown sugar
100g Cayenne pepper
1kg from the basic spice as a bove

Mini Biltong Sticks
5 kg Meat
150 ml Vinegar
150 ml Worcester Sauce
200g Spice as above
50g usual Braai Spice

Chilli Bites
1 kg BBQ spice
8 Table Spoons Cayenne pepper
2 Eetlepls brown sugar
2 Cups fine salt

Use this on 5 kg raw meat with
150ml Vinegar
150 ml Worcester sauce
250 g Chilli Spice

BOEREWORS
Your best mix of meat for this is 80% Beef (Voor Kwart) 20% Pork (Belly)

If you dont get hold of your usual boerewors mix use this one
13gr Salt
2gr White Pepper
1g Nutmeg
0.5 gr Naeltjies /Cloves?
2 gr Coriander

250ml Vinegar
250ml Water
550g Boerewors mix or above
300g Bread Crumbs/WeetBix or any binder
750ml Water

Dry Wors

33kg Lean Beef Meat (the less fat the better)
100g Salt
500g Boerwors Spice or above
500ml Worcester Sauce
500ml Water

5ml Smoke Raps

Game Wors
2 thirds Wild Meat
1 third Beef or Lamb
27g per Kg Meat Burger Spice
10g per Kg Meat Vinegar
10g per Kg Meat Worcester Sauce
Add Water to get the right thickness to stop

Suppose you lot have nice sunny weather to hang biltong. I use a paper clip bending the small hook out to hook on a grill (A braai Grill is a the best place to hang them, can also use your washing line but have to gaurd the meat)and the bigger one to hook in the biltong top.
